Project of International Cruise Management under Sustainable Tourism Management Fieldtrip

           A group member between lecturers and students in Master of Management Program in International Tourism Management, Burapha Business School, has been organized a study tour on international cruise management under the concept of sustainable tourism management. The project integrated four courses from the curriculum including Digital Marketing and Branding in the Tourism and Hospitality Industry, Sustainability Management in the Tourism and Hospitality Industry, Strategic Management and Entrepreneurship in the Modern Tourism and Hospitality Industry and Seminar on Trends in the Tourism and Hospitality Industry. The project was designed to enhance experiential learning emphasis on Hands-on experience and Hands-on learning along with studying in term of sustainable tourism management at international standard. The study tour took place from February 1st-3rd , 2024 starting from Laem Chabang Port in Chonburi Province and dock at Phu Quoc (Vietnam), then finished at Laem Chabang.

           The activities were aimed at broadening the perspectives of junior and middle-level executives in the global tourism industry focused on sustainability upon Sustainable Development Goals, providing them with opportunities to discuss and exchange knowledge on digital marketing, branding, and international cruise management under the concept of sustainable tourism management from one of crucial business to either economic or ecology system in tourism and hospitality industry.

          The Costa Serena, a large international cruise ship owned by Carnival Corporation & plc, the world’s largest cruise company, was used for this project. The ship, part of the Italian Costa Cruises family, is 290 meters long, can accommodate 3,780 passengers, and has over 1,507 rooms, either passengers’ or staffs’ residence available, as well as various restaurants and recreational facilities.
           Faculty members and students participated activities including the Show Cabin site visit and talk-and-share with managerial staff, attended lectures, and visit main part of the cruise to study operations and services in areas such as guest rooms, restaurants, kitchens, fitness rooms, spas, docks and entertainment shows. Private kitchen visit conducted by Head Chef and Sous-Chef with care and special attention. The team was given an opportunity to realise the process in kitchen and food preparation areas, focusing on food waste management for large passenger ships, waste separation in dining areas, and hygiene practices, which are crucial for achieving sustainability in accordance with SDG Goals 11 Sustainable Cities and Communities, 12 Responsible Consumption and Production, 13 Climate Action, 14 Life Below Water, 15 Life On Land, altogether. 

        We have learnt the cruise generated many positions with follow 8 Decent Work and Economic Growth and strengthen SDG Goal 16 Peace, Justice and Strong institutions as on board the team learn the mutual collaborate among cross cultural with various international races, staffs who come to work on board from all over the world with the same direction.

        This project provided significant concepts and successful case studies that could be applied to hospitality and tourism management and contribute to the sustainable development of tourism either at national or international level.
